Lots of my friends who only have the sons without the daughters. They are all very jealous about that. But they have no idea having a daughter’s is like the debts collector from the underground black market. It’s very difficult to deal with. My girl has been very handful in recent years since she becomes a higher stage of the teenager. She behaves very dramatic too! As the mom that I am having my pre-menopause. I get very fragile for my emotions. Our relationship becomes very intense. Any conversation we have it could bring to a fight and flip the whole universe upside down. Things like she planned lots of shopping had been down in one afternoon, the she would go to school at night for the band practice. I told her to take it easy, don’t stress herself out. I could help her some shopping at the next day, so she didn’t need to running around and drove herself nuts. Who knows she threw a bomb to me and said, why I had to change her plans, planned her future. G ..... I’m a mom who believe in the free

spirit and independence. I had no interest to control her future at all. She would need to plan her own future. I might just give her some suggestions if she needs it. At that moment, I only could rollover my eyes, take a deep breath then walk away. Otherwise I know if she touched my nerves I would just explode. That will be hurt for my heart and my soul.

I spoke to her father few weeks ago. I really don’t want to see her in front of my face. Her father said, how could I say that. I’m the mother of my daughter. Mom does has temper and get emotional too, k? It doesn’t mean that I don’t love her, don’t care about her when I said I don’t want to see her in my face. I was just trying to cut down all the conflicts between us. I believe it better to keep quiet and accompany with her , use the method that she could be accepted it’s nothing wrong with that sometimes, right?

This girl joints lots of activity, like a busy honey bees and all over the places. Most of time she doesn’t eat any breakfast or she would get a famous venti iced caramel macchiato to keep her energy up during the daytime. She is getting less time to have dinner with family now. She loves this savor steam eggs when she got exhausted. This simply dish will only take about 10 minutes to do it. After my daughter had this hot smooth silky steam eggs. I could tell she got the great comfort. When she felt warmth, she would be more calm, no more temperamental and willing to have a conversation again!

She should be left the house in the college about this time next year. My dear girl. I had wrote down the steam eggs recipe. It all you could take a good care for yourself in the future. I hope one day you could understand the way how I feel to love you! I have no expectations from you, but stay safe, healthy, happy. Wish you will get accepted to the college that you wish for. Do remember choose what you really like and what you good at it, not just something popular for a great living!

Steam eggs

Ingredients: 1 person.

  1. 1 egg.

  2. 1 teaspoons of Japanese seasoning soy sauce.

  3. 1 teaspoons of sake.

  4. Chicken broth or clam juice.

  5. Salt.

  6. Any color vegetables cooked fast for decoration.

All the liquid to add in the egg is the 2 times amount. You could use the egg shells to measure in the beginning. When you got it, just use the same container. You don’t need to measure anymore.

Have a pot, place the rack inside. Make sure it will fit the bows in and you can cover with the lid on. Pour in some water below the level of the rack. Bring it to the boil.

Mix egg with all the liquid ingredients and salt together. Use folk to mix, but avoid to bring out the bubbles. Use the folk to pick up the egg white high to separate it for easy mixing. This is good enough to make the smooth steam egg for the family style. If you have a higher standard, you could use strainer to filter the egg mixture. Cover with the plastic wrapper.

Turn off the heat from the steam pot for easy transfer the egg mixture bowl to the pot. Cover with the lid then turn on medium low heat. Steam about 10 minutes! Gently shake the pot. If the center of steam egg not wiggle too much then it’s done! Take off the wrapper and place the decorating vegetables. Cover with the lid again to be cooked or warm up. Serve while it’s steam hot. It taste pretty good when it chili for the person who live in America for so long just like me.

The key to make the perfect steam eggs are :

  1. No bubbles when you are doing the egg mixture, so the steam egg won’t show up lots of little holes after it got steamed.

  2. If the liquid quality is too much, egg might not be settled. If it’s less liquid, the eggs will be hard.

  3. Medium low heat can bring out the smooth silky steam egg texture. If you use high heat the steam egg will look kind of puffy.

*If there’s no plastic wrapper, just please a chopstick or long spoon between the pot and the lid. When the air got the circulation, the water droplets won’t get into the steam egg to ruin the smooth surface. Do remember use the medium low heat. It will take a little be longer to steam, that’s the disadvantage.

*steam eggs without the filings is better stay on adding in the 2 times liquid. This way the eggs will hold it beautifully. If you want to put some filing in, you could raise the liquid to 2.5. You need to also consider some ingredients might excess out water during the steam process. Meat shouldn’t cut it to big or with bone. Vegetables which take longer or with more water content. It could be simply blanched, rinse under the cold water than squeezes the water out, such as the carrot and spinach. If you keep adding the fresh shrimp and mushroom than it would be the high end quality steam eggs from the Japanese restaurant.

*Never heat up the steam eggs in the microwave, it will be explored. Place the steam eggs with cold water in the pot. Use medium low heat to warm up the steam eggs. That’s good eats!!!

許多只有兒子沒有女兒的朋友都很羨慕我有個女兒. 但這些媽媽們殊不知女兒真的是媽媽上輩子的高利貸債權人, 很難纏的! 最近的一年來, 我家女兒正值青春期巔峰. 她的行為戲劇張力特別大. 而為娘的我剛好是處於更年初期則是容易犯玻璃心.我們之間的關係經常處於非常緊張的狀態, 動不動一兩句話的交談就足以搞得翻天覆地的. 好比上星期她安排了一整天的購物行程, 晚上還得回學校參加樂團的訓練. 我一得知, 怕她累壞了. 所以建議有些東西不用急, 隔天我可以幫她採買即可. 這樣她就不用東奔西跑搞得精疲力盡. 而她卻像是吃了炸藥一樣的回應我, 為什麼要改變她的人生, 計劃她的未來. 我勒 ...... 為娘我支持自由靈魂和獨立主義的媽媽. 我對於掌握或是控制她的未來一點興趣都沒有. 她自己的人生自己好好計劃, 我頂多就是給些意見而已, 如果他需要的話! 當下的我也只能翻個白眼, 做個深呼吸然後離開現場. 要不然我這火爆脾氣一觸發又不可收拾了! 傷心也傷神呢!

前幾星期我告訴她爸, 我實在很不想看到她在我面前出現. 孩子的爸說, 我怎麼可以這麼說, 我是她媽媽呀! 媽媽也是有情緒有脾氣的, 好嗎? 不想看到她, 並不表示我就不愛她, 不關心她了! 只是想減少彼此之間的語言衝突而已! 我相信有時候默默的在一旁觀察陪伴, 用對方能夠接受的方式對待. 這樣也沒什麼不好! 是吧?

我這個女兒活動可多了, 每天像隻小蜜蜂嗡嗡嗡,忙的團團轉. 她早上不是不吃就是捧著一大杯名牌高熱量的冰咖啡就可撐上一個大白天. 晚上在家吃飯的時間也越來越少. 她累的時候最喜歡吃的就是蒸蛋. 這一碗簡單樸實版本的蒸蛋十多分鐘便可以搞定. 女兒吃了這碗熱騰騰的, 滑嫩順口的蒸蛋後. 我可以看到她舒服多了! 當她的心暖了後, 就不會再亂發脾氣. 相對的, 話㕅子就開了!

明年的這個時候她應該就離家去唸大學了. 我親愛的女兒呀! 我把蒸蛋的食譜寫下了. 以後就要靠你自己好好照顧自己囉! 希望有天你能體會我愛妳的心情! 我對你沒什麼期待, 就希望你能平安健康喜樂! 接下來的日子裡願你能申請到理想中的大學. 一定要記得選擇你所喜愛的也是你強項的科系. 這樣你才能有開心展翅高飛, 翱翔穹蒼的未來!!! 願老天爺保佑你囉!

蒸蛋

材料: 1人份

  1. 1顆蛋.

  2. 1小匙日式鰹魚醬油.

  3. 1小匙清酒.

  4. 雞高湯或是蛤蠣高湯.

  5. 少許鹽.

  6. 任何有顏色快熟可以裝飾的蔬菜.

材料中所有液體的比例是蛋的兩倍至兩倍半. 剛開始可以用蛋殼計量, 有概念後就可用一樣的碗盛裝, 就不用再量了!

取一鍋子, 裡面放上網架. 確定放入碗後, 可以蓋上鍋蓋. 注入冷水低於網架, 蓋鍋煮沸!

將蛋和所有液體材和塩混合於小碗中, 用叉子打散, 避免起泡. 用提起, 拉高的方式將蛋白盡量分散. 家常蒸蛋其實這樣蒸熟就可以很綿密了. 如果你要求甚高的話, 可以用蒒子先行過濾. 拌勻後鋪上保鮮膜.

煮沸的那鍋水先熄火才不會因為要放入盛裝蛋液的碗而燙傷. 放入這些碗後蓋上鍋蓋. 用中小火約蒸十分鐘左右. 稍微搖動鍋子, 見碗中兒的蛋液凝結沒有太大的晃動就熟了! 熄火取出放入裝飾的蔬菜. 蓋鍋再悶一兩分鐘加熱熟成. 趁熱上桌. 美國待很久的我, 覺得冰冰涼涼的蒸蛋在夏天也是挺好吃的!

蒸蛋的重點是

  1. 打蛋不起泡, 蛋才會呈瘡疤狀.

  2. 液體的比例太多則無法凝固, 太少則徧硬!

  3. 中小火蒸的蛋才能平滑. 如果用大火蒸的蛋表面容易拋拋的.

*要是不裹上保鮮膜就在鍋子與鍋蓋間放根筷子或湯匙. 空氣有了對流, 蒸煮過程中, 鍋蓋上凝結的水份就不會滴到蛋液中而形成許多小洞. 但記得一定得使用中小火, 缺點是蒸的時間會長一些!

沒有添加內餡的蒸蛋用兩倍液體的比例比較能凝聚美美的. 若想要放些其它的材料一起蒸, 液體的比例可以提高至2.5倍. 另外還得預留食材的出水率. 肉類不能太大或帶骨肉. 不易熟或是水份多的蔬菜可以先燙過, 沖冷水, 擰乾, 就像紅蘿蔔和菠菜. 如果再加上鮮蝦香菇那就是日式料理餐廳中的高級版的蒸蛋了!

*冷掉的蒸蛋不可以用微波爐加熱, 會四處飛濺的喔! 可以在鍋中, 冷水隔水, 用中小火加熱. 那才好吃!
